Caseificio Dell'Alta Langa - Bonrus 

A silky, creamy cheese with a soft, edible rind. This cheese is high in acidity with notes of dry fruit. It's flavorful on its own and interesting enough to be paired simply with a crisp.

Clawson - Mango Ginger Stilton 

This creamy, crumbly cheese is sweet, savory and intense in flavor. The bits of mango and spicy ginger open up new dimensions of flavor. Pair it with something sweet like jam or fruit and wash it down with a dry white.

Emmi - Emmentaler AOC

The original Swiss cheese from which all Swiss cheeses draw their distinct holes and flavor. It was first produced more than 4 centuries ago and is still made in 200-pound wheels. Firm yet supple, nutty with slight acidity, it is mild enough to pair with a bold salami like the Lupo.
